Panang Beef, a Thai recipe. Somewhat complicated, but not impossible, assuming you can find red thai curry paste.
Stuffed steak - round steak wrapped around stuffing, sounds good.
Brisket - easy, crockpot meat.
Chocolate dipped strawberries. Mmmm.
